Broccoli Salad – Updated

This is a bit of a twist on the classic broccoli salad with bacon, raisins, grapes, and sweet mayonnaise laden dressing. Don’t get me wrong, I love that salad. This is just a little twist on it for something different – extra veggies and less mayo. Try it using pre-packaged broccoli slaw for a great time saver – no need to pre-cook!

Ingredients

  • 2 cups Broccoli, cut into small florets, stalk pieces sliced into coins
  • 3 slices Bacon, diced and cooked until crisp
  • 2 cups Cherry or Grape Tomatoes, sliced in half lengthwise
  • 1/4 cup Green onions, sliced thinly
  • 2 T Mayo
  • 1 T Whole grain mustard
  • 1 T Apple cider vinegar
  • 1 T Honey, or a bit of Stevia
  • Salt & Pepper
  • 2 T Pepitas (toasted pumpkin seeds)
Directions

Blanching the broccoli: Use a traditional method to blanche the broccoli, or save time (and dishes!) and do it my way. Place the broccoli in a shallow bowl that is large enough to give it some space to move around / get close to a single layer. Add 2 T water, cover with plastic wrap or a lid, and microwave on high for 1 minute. Drain off the hot water and plunge the broccoli into a bowl of well salted, icy water. Done. Now, drain the broccoli really well in a colander (I poured mine out onto some paper towels to pat them dry for extra credit. Add the broccoli, bacon, and the rest of the veggies to a large salad bowl.

Dressing: In a small mixing bowl, combine the mayo, mustard, vinegar, and honey, whisking to combine. Season with salt and pepper.

Toss salad with dressing, sprinkling in pepitas just before serving.
