Watermelon Cucumber Salad

I have a hard time walking past those cute little seedless watermelons that start showing up in the produce aisle this time of year. My local grocery store started calling them “personal sized watermelons”, which is kind of adorable. Your own personal pet watermelon… awww…

This is a super light and refreshing salad, great for dairy free and plant based eaters, but it also works well as a fruity salsa on top of grilled chicken or fish. Choose whatever vinegar you have on hand – I used a slightly sweet raspberry vinegar, but rice wine vinegar, white balsamic, or champagne vinegar would also be nice.

Watermelon Cucumber Salad

Ingredients

  • 1/2 “personal sized” watermelon, diced into 1″ pieces
  • 1 English cucumber, quartered lengthwise, seeds removed, diced into 1/2″ pieces
  • 1/4 cup chopped cilantro
  • 1-2 tablespoons sweet and fruity vinegar
  • healthy pinch of salt

Directions

Mix the first three ingredients in a large bowl. Add 1 tablespoon of vinegar and a pinch of salt, stir and taste. If you like, add more vinegar and/or salt.
